Chicken Alfredo

 Ingredient List

• 2 boneless skinless chicken breasts - cut in half length ways

Coating

• Flour- enough to coat chicken breasts
• 2 eggs
• 2 Tbls water
• ½ Tps salt
• 1/2 cup parmesan cheese
• 1/2 cup Romano cheese
• Bread crumbs- enough to coat chicken breasts
• Mozzarella cheese
• 4 Tbls Oil
• 4 Tbls Butter

Sauce

• 1 cup whipping cream
• ½ cup water
• ½ stick butter
• 1/2 cup Parmesan cheese
• 1/2 cup Romano cheese

1.  Mix 2 eggs, 2 Tbls water, ½ tsp salt, ½ cup Parmesan and ½ cup Romano cheese.
2. Flour breasts, then dip into egg/cheese mixture then into bread crumbs.
3. Fry slowly in 4 Tbls butter and 4 Tbls oil until golden brown.
4. Place chicken in casserole dish and cover with mozzarella cheese.
5. In saucepan, heat 1 cup whipping cream, ½ cup water and ½ stick of butter. Heat over low heat until butter melts. Add ½ parmesan cheese and ½ Romano cheese and stir over low heat for 3 to 4 minutes.
6. Pour sauce over chicken and bake at 375 degrees for 8 - 10 minutes or until bubbly. Don't overcook!

Serve with chicken flavored Rice a Roni
